It's Winter, It's cold out, It's been raining..(till today)...
So what better meal to cook up than a big yummy pot of chili! And since there are so many variations out there, I thought I'd share with you ours in hopes that you ll share yours with me!
Here we go...
*everything is approximate measurements...add or reduce to your liking!
Ingredients:
-1.5lbs of lean ground beef
-1.5 large yellow onion chopped
-large green pepper chopped
-3 (16oz) cans of whole tomatoes ( I use Hunt's All Natural)
-3 (16oz) cans of kidney beans (i like to use 1 can of light kidney, 1 can of black beans & 1 can of pinto)
-2 (8oz) can tomato sauce
-1/2 tsp minced dried garlic
-1 heaping Tbsp chili powder
-1/2 tbsp salt
-1/2 tsp black pepper
HOW TO:
-brown beef with chopped onion and green pepper (drain well and put in big pot)
-empty the juice from the cans of whole tomatoes into pot
-put the actual whole tomatoes into a food processor & swirl around fairly well (not soupy but not chunky)
-Add tomatoes to pot
-Add all cans of beans (don't drain)
-Add all spices
Simmer uncovered for about 2 hours
Taste and add additional spices to taste (I added a little more chili pepper and dried garlic)
Simmer till ready to serve then
top with shredded cheese, sour cream, jalapenos & of course...Texas Pete!
We also crumble crackers in, oyster cracker or saltines are best:)
