Two Sunday's ago, Chad's family was hosting a baby shower for his cousin Tad and his wife Carrie who are expecting a sweet baby boy very soon! Baby's Name: TBA!
Sidebar...Chad didn't make it to the shower, he was detoxing from his 30th Birthday throw down the day/night before! Ill post about that next, promise!
This family knows how to do some cooking and eating! I always leave events stuffed to the gills! Chad's Aunt Beverly, who I LOVE, made these amazing Asparagus Wraps which I couldn't get enough of! Even Reagan ate several! Beverly is experimenting with all new recipes for family gatherings since Carrie, her daughter in law, is a vegetarian. These were phenomenal so I had to share after Beverly sent me the recipe! She also made a bean salad that I want the recipe for next! Enjoy!

The Guests of Honor
ASPARAGUS WRAPS
About 1 ½ long loaves of plain white bread.
-1 (8 ounce) package cream cheese, room temperature
-2 cups grated sharp cheddar cheese, room temperature
-2 tablespoons mayonnaise
-2 cans asparagus, well drained
-1 stick butter, melted
-Parmesan Cheese
-Paprika
Trim crusts from bread and flatten slightly with rolling pin. In a bowl stir cream cheese, grated sharp cheddar cheese and mayonnaise until well blended and creamy.
Spread a thin layer of cheese mixture over each slice of bread. Roll one asparagus spear inside each and seal. Melt butter in microwave and roll each asparagus wrap in butter to coat. Place on a baking sheet and sprinkle with Parmesan cheese and then Paprika. (At this point you can freeze for one hour or until butter hardens and the wraps are somewhat firm. Cut each wrap in half crosswise and store in a plastic bag until ready to use.) Arrange frozen asparagus wraps on an ungreased baking sheet and bake in a preheated 400 degree oven for about 20 to 25 minutes (depending on whether or not they are frozen) or until lightly browned and a little crusty. Check occasionally and turn if necessary for even browning and to prevent burning.
If you are going to have them with a meal, you can leave them whole but for appetizers, it is better to cut them in half

Those asparagus wraps were delicious! Beverly is such a good vegetarian cook, I'm lucky to have such a great mother in law!
